For thousands of years, plants have been an integral source of food for humans. Around the world, certain vegetables grew in popularity due to their ease of cultivation, while others became increasingly rare. Today, food enthusiasts have renewed interest in many of the world's rare plant foods by promoting their cultivation and use, protecting these scarce species from extinction.
